Care of the vineyard: Guyot pruning. 8/10 buds on the fruit-bearing and 2 on the spur. Desuckering by hand. Thinning. Green harvest.
Vinification: Maceration on skins for 12 hours. Bleeding of a vat. Long and low temperature fermentation in thermo regulate stainless vats (control of the temperature). After tasting, racking before the end of the alcoholic fermentation. Malo-lactic not made.
Maturing: In vat during few months on lees. Bottling at the property in spring.
