Care of the vineyard : Guyot pruning. 10 buds on the fruit-bearing and 2 on the spur. Desuckering by hand. Thinning. Green harvest.

Vinification : Maceration on skins for 12 hours. Bleeding of a vat. Long and low temperature fermentation in thermo regulate stainless vats (control of the temperature). After tasting, racking before the end of the alcoholic fermentation. Malo-lactic not made.

Maturing : In vat during few months on lees. Bottling at the property in spring.

Tasting : Deep pink fresh colour. The nose unfold different aromas of cherry, . Just the right amount of acidity. Well-balanced between sweetness and acidity; very fruity and lively. Long in the mouth.

Wine/food : Aperitive, exotic and spicy food. Dessert..
